Chef Tyler Florence captivated attendees at the inaugural Traverse City Food & Wine Festival with his live-fire cooking demonstration, highlighting recipes from his latest cookbook, American Grill.
Set against the picturesque backdrop of Grand Traverse Bay, Florence prepared his signature Reverse-Seared Grilled Chicken with BBQ Sauce, accompanied by Marge’s Potato Salad and a refreshing Grilled Peach Panzanella Salad.
During the demonstration, Florence emphasized the importance of dry-brining the chicken to enhance flavor and moisture. He explained that starting the cooking process in the oven at a low temperature before finishing on the grill ensures a juicy and evenly cooked result.
For the BBQ sauce, Florence combined crispy bacon, fresh thyme, caramelized onions, garlic, ketchup, brown sugar, molasses, red wine vinegar, and a blend of mustard, cumin, smoked paprika, and black pepper. He encouraged attendees to personalize the sauce by adding ingredients like peaches or cherries for a unique twist.
Reflecting on his connection to the area, Florence shared that early in his career, he worked at the Grand Traverse Resort & Spa, making his return to Traverse City a meaningful homecoming.
The festival, held from August 20 to 24, 2025, featured a lineup of esteemed chefs, including Mei Lin, Sarah Welch, and Celina Tio, offering attendees a diverse array of culinary experiences.
